Fabian Pauta
Executive Chef
A native of Gualaceo, Ecuador, Fabian began his career in one of the kitchens of Mario
Batali at Becco in 1994. Here he learned essential kitchen skills and an awareness of
ingredient driven cuisine. Simultaneously, Fabian began working at Le Madeleine and
soon took a full time position in the kitchen. He became curious about and fascinated
with this new world of kitchen camaraderie and production. His dedication, discipline
and passion to create, successfully drove him through the ranks and he was promoted
to Sous Chef under Bruce Beatty in 1998. Throughout his career at Le Madeleine,
Fabian has spent days-off and vacations to strengthen his craft with some of New
York City’s top chefs, including Gerry Hayden (Aureole, Amuse), Amanda Freitag
(Gusto, ‘Cesca) and Daniel Humm (Eleven Madison Park).
